Kent’s latest project.
Yep Octopus. Kent actually used to track down Octopus in BC…not easy to do. Then, courtesy of a Greek restaurant in Victoria he would prepare them and marinate them and freeze in small amounts for special occasions.
Apologies to the squeamish but the result is not at all slimy and very very tasty. We have tried octopus prepared this way in several restaurants and I can honestly say that Kent’s octopus is the best I’ve had.
After cutting up, and throwing away the less desirable bits (treat for the cats) the octopus is simmered for 30 minutes or so. Outside of course…less smell in the house.
The Octopus is then cut up into small pieces and then Kent adds many herbs and different vinegars and then marinates overnight, puts into small baggies and freezes for later. A great treat for those of us who like octopus. Well done Kent.
